Food Pairing Suggestions
Look for recipes where power meets elegance to mirror this wine’s style. Lamb, pork, sausage, grilled meats, stews and game will all pair beautifully with this wine. Dishes with black olives, black pepper, pungent herbs, and mushrooms will also compliment nicely. Create a charcuterie board of hard cheeses and salami for your next wine party.
This bottling presents the distinctive character of Napa Valley’s southern Coombsville AVA. The vines are meticulously hand-tended by Ignacio Delgadillo, Sr. The Coombsville vineyard is tucked along a small creek in rocky soils. The temperate conditions there promote a long growing season, creating grapes with rich aromatics and smooth tannins.
Winemaker Notes
36 months in barrel, 4+ years in bottle
100% French oak; 60% new
Grapes were harvested in the cool early morning hours to ensure clusters arrived at the winery in perfect condition. After destemming, a whole-berry fermentation lasted 8 days. A gentle basket press separated wine from the skin cap, capturing nearly free run juice.

About the Winemaker
Winemaker Ignacio Delgadillo, Sr., started in the wine industry in 1975 at Freemark Abbey, eventually becoming cellar master during the days when Freemark produced one of the top Cabernet Sauvignon releases in the Napa Valley (and that is saying something). Along the way, he has consulted as a private vineyard contractor and established a successful custom wood packaging business.
After all those years in the vineyards and in the winery, Ignacio and his son, Ignacio Delgadillo Jr., found the opportunity to create their own label in 2001, and Delgadillo Cellars was born.
