When I was 18 years old I lived for 6 months in Bordeaux, where I was introduced to fine wines, then decided to return to California to become a winemaker. This wine is made in the image of the wines I fell in love with while I was there. It has powerful black fruit aromas and taste with rich texture and very moderate tannins for a smooth, lengthy finish. This wine is very enjoyable with or without food.
~Tasting Notes by Winemaker Betsy Spann
Appearance medium garnet with ruby flecks
Aromas black currant, blackberry, plum, dark chocolate, anise, smoke, saddle, tomato leaf, eucalyptus
Palate cherry pie, sweet tobacco, well integrated tannins
Food Pairing Suggestions
Softer tannins of this Cabernet Sauvignon make the wine very food friendly but also great for sipping on its own. Try it with steak frites, venison, buffalo burgers and roasted vegetable dishes. If pairing with cheese, go for Manchego, Comté or White Cheddar.
