The fresh bright red hue with purple edges leads into aromas of black cherry with hints of raspberry and black plum. The mouth opens with delicious vanilla and mocha merged with the same cherry and plum found on the nose. Enticing traces of graphite and a mineral essence build down the length of the mouth, joining pomegranate and more vanilla in the finish. FOOD PAIRING SUGGESTIONS This deeply concentrated, dark fruit-driven Cabernet Sauvignon needs food pairings and preparations to match and balance it. Experiment with proteins like pepper-crusted tuna steak, NY strip or roasted lamb and duck. Compliment with roasted cremini mushrooms, creamed spinach and potatoes au gratin. Or try a rich, cream sauce over veggie stuffed enchiladas. For cheese pairings, try firm, semi-firm, or hard cheeses with a bit of age, including Gouda and Cheddar or Manchego and Petite Basque.

ABOUT THE VINEYARD

The Oakville district is the heart and soul of Napa Valley Cabernet Sauvignon, where the coolness of the south meets up-valley warmth in perfect equilibrium. Oakville isn’t too hot; it isn’t too cold. It’s just right. That’s why Cabernet Sauvignon from Oakville so perfectly expresses the essential qualities of the varietal in deep, complex wines that can last for decades. Charming Creek is located on Route 29 just north of Oakville Cross Rd. The old Clone 7 Cabernet Sauvignon vines here give perfumed aromatics but also silkiness, deep color, power and richness. Also typical of Clone 7, the wines age very gracefully and show good acidity and structure when older. After 10 years this vineyard will still show dark fruits and supple tannins.

About the Winemaker:

Nick Goldschmidt is one of the world’s most respected winemakers with over 25 years experience. A native of New Zealand, he graduated with a Distinction in Horticulture and went on to study and work in Australia at notable wineries including Kumeu River, Coopers Creek and Babich. He gathered additional winemaking experience in California and South America, including his first harvest in Chile as winemaker for Calitera. An opportunity with Simi Winery arose in 1990, following a casual meeting with famed Winemaker Zelma Long. With that, Nick and his wife Yolyn settled in Healdsburg, CA. What began as a six month commitment led to 15 years with Simi Winery, where Nick, who became Vice President and Chief Winemaker in 1996, was one of the driving forces that brought the Simi Reserve Cabernet program to notoriety.
